Here is a really quick and easy breakfast/ brunch idea that will surely impress your guests. This is a very common way of making scrambled eggs in India but ofcourse every home has its own version of the recipe. Here is how I like to make mine.
Scrumptious Masala Scrambled Eggs
1 medium onion finely chopped
1 small plum tomato chopped
3-4 small green chilli peppers chopped (optional)
5-6 Tablespoons of chopped fresh cilantro
4 eggs ( lightly beaten)
1/4 cup milk ( optional)
Salt and pepper
- Heat 2 tablespoons of oil
- Add the chopped onions and cook till it turns translucent
- Add the tomato and cook for 2-3 minutes till it is well mixed with the onions
- Add the green chili peppers and cilantro
- Add the beaten eggs and cook for a minute
- Add the milk , salt and pepper to taste
- Cook till the eggs are done
- Garnish with fresh cilantro
That is what I would like to eat for breakfast tomorrow…
