Herb Roasted Potatoes

One of the easiest ways of cooking potatoes is roasting them. All you do is slather them with some kind of flavoring, put them in an oven and voila – you have a delicious side dish to go with any meal.

I always have some kind of pesto handy in my fridge – my favorite one being a parsley pesto. You can use a store bought one or click on this link to use my recipe.

I prefer to roast the potatoes a little longer as I like them crispy but you can adjust this recipe to your taste.

Mixed Berry Bars

Roasted Radishes and Carrots

Just look at the gorgeous colors on this tray! 

I sometimes don’t know what to do with all the radish that I get in my weekly organic box of vegetables. This is a wonderful recipe from Food Network in which a healthy delicious plate of veggies is ready in about 20 minutes!

Sweet Potato Shoestring Fries

I just managed to improve my Sweet Potato Fries recipe by turning them into shoestring fries!

Be careful as you bake these as they can become black and crisp very quickly but you do want to mix in a few of the crispy ones with the rest as it really adds a nice crunch to the fries. You can eat them straight out of the oven but if you wait a little and let it cool down – the fries tend to get crisper.
