Maldivian Gulha : A Recipe from Six Senses Laamu, Maldives

Gulha are bite sized, ball shaped hedhika which are usually stuffed with tuna fish, onions and grated coconut.

If you would like to make “Mas Roshi” which is a flattened version of gulha, then use the same recipe except you need to shape them into flat discs about 3” in diameter and pan fry it.

Maldivian Roshi: A Recipe from Six Senses Laamu, Maldives

Roshi is very similar to Indian rotis (flatbreads).

The secret to making soft dough is using warm water whilst kneading the dough. You can add a few tablespoons of shredded coconut to the dough whilst kneading it to add flavor.
