Cream of Fresh Tomato Soup

I had the best tomato soup recently at my friend Stephanie’s home.

It was so yummy and bursting with fresh flavors of basil and tomato.

She used a really simple recipe from the Barefoot Contessa. I recreated the soup the very next day at home and it was a super hit.

You can choose to reduce the amount of cream in this soup or even use milk instead. This soup freezes really well so whip up a big batch and freeze some of it for later.

Simple Tomato Soup

Fall is a wonderful time for tomatoes.

This soup is crazy easy! It makes it even easier if you have a pressure cooker. If not, then you can just boil it in a regular pot too. My kids just love this soup with a dollop of cream in it. My favorite topping for this soup is a handful of shredded cheese and tons of hot sauce. It just melts into this yummy gooeyness. Throw in a few pieces of croutons or toasted bread in to add crunch.
