Roasting veggies is always my go to way of making everyday vegetables. I especially love roasting sweet potatoes and decided to add a little spicy kick to my usual recipe by adding some spices. Spiced Roasted Sweet Potato and Yams
2 sweet potatoes, cleaned and cubed
2 Japanese Yams, cleaned and cubed
1 tsp turmeric
1 tsp paprika
1/2 tsp cayenne pepper ( or to taste)
4 – 5 tablespoons of extra virgin olive oil
Salt & pepper to taste
Preheat the oven to 350°F.
In a ziplock bag or a bowl combine the cut sweet potatoes and yams the and the olive oil.
In a small bowl combine the turmeric, paprika, cayenne, salt and pepper and then add this mixture to the sweet potatoes and yams. Make sure the oil and spices are evenly spread on the chopped vegetables.
Lay out this mixture in a single layer on a cookie sheet and roast for 30 – 35 minutes till they become soft. You will see little brown spots forming as they are getting done. Adjust cooking time to the desired crispiness ( I like mine a little on the crunchy side). Remove from oven and serve.
