There’s nothing that spells comfort more than a fried rice with huge hunks of egg in it! When we were growing up – we always asked for “extra egg” in our rice – in fact we still do. Here is my quick recipe for a scallion and egg fried rice. Click here to print recipe.

Scallion and Egg Fried Rice
Serves 4
Ingredients:
4 cups of cooked rice
4-6 eggs – lightly beaten
1 small bunch scallions, chopped including the green part
Oil (use a tasteless oil such as peanut, sesame or avocado)
Salt, pepper & chilli oil to taste
Method:
Heat 1 tbsp oil in a frying pan. When hot add the beaten eggs, salt and pepper to taste and scramble gently. Remove and set aside.
In a wok, add 2 tbsp oil and turn heat to high. Add the rice in and stir well, breaking up any clumps. When it is heated through add the chopped scallions and mix well for about a minute. The wok should be really hot.
Add salt and pepper to taste and add eggs in the final step. Give everything a good mix and serve hot topped with chilli oil.
