Kale Keema Fried Rice

A while back I posted this recipe for a keema (minced meat) with kale. Here is what I did with the leftovers. I just stir fry it with rice – kind of like a desi version of fried rice – dollop some ghee on top and you have a band new dish. Here is the recipe for the keema with kale. Serve this rice with my Beet Raita.

You can adjust the quantities in this recipe as per how much you have leftover.

Kale Keema Fried Rice

Serves 4

6 cups white rice, leftovers

2-3 cups kale keema ( follow recipe in link)

1 bunch cilantro, chopped

Pure ghee (or any oil)

  • Heat 1 tbsp ghee in a wok on medium high heat.
  • Add rice and mix well.
  • Once the rice has softened a bit, add the kale keema.
  • Mix well, cover and let it cook for 10 – 15  minutes on medium heat, stirring from time to time.
  • Remove cover, add salt to taste and the cilantro. Make sure everything combined well with the rice.
  • Add some ghee on top, remove from fire and serve hot with beet raita.
