Ever eaten the vine and leaves that the pumpkin grows on? In India this is rather common in the Northern parts and is really delicious and healthy. Here is how we make this dish in my mother’s kitchen.
Stir Fried Pumpkin Leaves (Sitaphal Patta ka Subzi)
Ingredients:
1 bunch of pumpkin leaves
1 tsp. jeera (cumin seeds)
1 small onion, chopped
1 green chili, sliced
1 tbsp. oil
Salt to taste
Method:
- Heat oil in a wok or kadai.
- Add jeera seeds.
- Add onions and green chili.
- Add the pumpkin leaves.
- Stir fry for about 7 – 10 minutes until the leaves wilt.
- Add salt to taste and serve hot.
