Stir Fry Mung Dal (Stir Fried Yellow Lentils)

Lentils or dals in Indian cuisine are often cooked into delicious aromatic stew like concoctions. However lentils can be cooked in stir-fried versions too and here is a simple recipe on how to do just that.

Stir Fry Mung Dal (Stir Fried Yellow Lentils)

 Serves 4 – 6Print This Recipe

Ingredients:

2 cups moong dal (lentils), soak for 2 -3 hours

1” ginger, sliced

1 tsp. jeera (cumin seeds)

1 tsp. haldi (turmeric)

1 cup water

Salt to taste

Tadka:

2 onions, finely chopped

3 tbsp. oil

½ tsp. dhaniya (coriander powder)

½ tsp. chili powder (optional)

¾ tsp. haldi (turmeric)

½ tsp. amchur (dry mango powder)

Salt to taste

 

Method:

  • Heat 1 tbsp. oil in a wok or kadai.
  • Add 1 tsp. jeera seeds and allow it to sizzle.
  • Add the ginger and green chilies.
  • Add the soaked and drained mung lentils.
  • Mix well and add 1 cup of water, hladi and salt.
  • Stir this mixture and cover and cook it on medium.
  • Cook this for about 20 – 25 minutes until the lentils are cooked through but not liquidy.
  • Turn off heat and set aside.

Tadka:

  • In a small sauce pan, heat 3 tbsp. oil.
  • Add 1 tsp. jeera seeds and allow it to sizzle.
  • Add chopped onions and cook for about 10 – 15 minutes until browned.
  • Add the dhaniya, chili, haldi, and amchur powders and salt to taste.
  • Stir for 5 minutes or so and remove from heat.
  • Add this mixture to the cooked lentils and mix well.
  • Garnish with cilantro leaves and serve hot.
