Potatoes are a classic Indian comfort food. Here is the way that Shanti makes her yummy spicy potates.
Shanti’s Spicy Potatoes
2 lbs. potatoes boiled and chopped ( or use small new potatoes)
½ tsp. hing (asafetida)
1 tsp. haldi (turmeric)
Red chili powder to taste
• Heat 3 tbs. oil.
• Add the potatoes and stir.
• Add the haldi and salt to taste.
• Cover and cook for 5 mins.
• Add chili and cook on slow fire for about 15 minutes.
• Serve hot.
