Mushroom and Spinach Pinwheels

My friend Sonu makes these really super appetizers with puff pasty using a mushroom filling which I love! Here is a really simple rendition of her recipe to which I added spinach.

Mushroom and Spinach Pinwheels

Serves 10Print This Recipe

 Ingredients:

1 egg

1 tbsp. water

All-purpose flour

2 Puff Pastry Sheets, thawed

Mushroom and Spinach Filling:

2 green onion, chopped

4-5 cloves garlic, finely chopped

1 small onions, chopped

1 package mushrooms, cleaned and chopped

2 cups spinach, chopped (either fresh or frozen – must be thawed and drained)

½ bunch cilantro, chopped

Salt & pepper to taste

 

Method:

• Heat the oven to 400°F.

• Beat the egg and water in a small bowl with a fork and set aside.

 

Mushroom and Spinach Filling:

• In a sauté pan or wok, add 2 tsp. olive oil.

• Add the chopped garlic to the pan and sauté for about 30 seconds.

• Add the chopped onions and sauté for a minute.

• Add the spinach and mushrooms and cook on high heat uncovered for 5 – 7 minutes.

• Add the chopped cilantro and cook further until there is no liquid in the mixture and the mushrooms have cooked down – about 5 minutes or so.

• Add seasonings to taste.

For best results, make sure to remove as much liquid as you can from the spinach mixture before adding it to the pastry. If it’s too wet, it may make the pastry soggy.

Assembling Pinwheels

• Sprinkle the flour on the work surface.

• Unfold the pastry sheet on the work surface.

• Brush the pastry sheet with the egg mixture.

• Top with the mushroom and spinach.

• Starting at a short side, roll up like a jelly roll.

• Cut into 10 -15 (1/2-inch) slices.

• Place the slices, cut-side down, onto 2 baking sheets.

• Brush the slices with the egg mixture.

• Bake for about 15 minutes or until the pastries are golden brown.

• Remove the pastries from the baking sheets and let cool on wire

• Serve warm or cooled with hot pepper sauce
