This super healthy recipe for fish cakes is from Chiva-Som, which is a wellness spa in Thailand and has some of the best food I have ever eaten. I love these fish cakes – you can use any fish you like and feel free to add spice to the recipe.
Salmon Fish Cakes
250 g/ 9 oz salmon fillet, minced
250 g/ 9 oz salmon fillet, poached (in boiling water for 5 minutes and flaked)
4 tbsp. finely sliced Thai basil
4 tbsp. finely sliced cilantro
4 tbsp. finely chopped scallions
3 ½ tbsp. roasted ground rice (optional – recipe given below)
3 tbsp. soy sauce
2 tbsp. finely sliced mint
2 tbsp. soy sauce
1 tsp. ground white pepper
• In a large mixing bowl, combine all ingredients.
• Divide the mixture into 2-inch balls and form into cakes.
• Heat a saucepan with a little oil.
• Add the fish cakes and pan-fry them on each side until golden brown.
