Here is a spicy Indian take on potato salad. This wonderful recipe combines the earthiness of sesame with the pungent tastes of lime and mustard oil.
New Potatoes with Indian Style Spicy Sesame Dressing
1 lbs new potatoes, boiled and peeled (you can use regular potatoes too and chop them)
1 – 2 fresh green chilies, slivered (optional)
½ cup sesame seeds, roasted and ground
1 tsp. mustard oil
1 ½ tbsp. limejuice
Salt to taste
• In a bowl, combine the boiled potatoes with the ground sesame seeds.
• Mix the mustard oil, limejuice, chilies and salt.
• Add this dressing to the potatoes.
• Mix well and serve.
