Maldivian Vegetable Curry

The cuisine of the Maldives has influences from its neighboring countries of India and Sri Lanka and thus curry is a big part of their everyday food. Even though a lot of the spices used in the curry are similar, the Maldivian chicken curry still distinguishes itself.

Curries can be made using chicken, fish or vegetables.

Here is a recipe for a Maldivian vegetable curry.


Maldivian Vegetable Curry

Serves 4


1 small potato or sweet potato

50 gm pumpkin

50 gm green beans

50 gm carrots

1 tsp. Turmeric powder

1 green chili

5 -6 curry leaves

1 pandan leaves

1 medium onion, slice

1 tsp. garlic-ginger slices

Salt to taste

1 ½ cups coconut milk



• Mix all the ingredient in a cooking pot and put on the fire cook until the gravy gets thick (about 15 – 20 minutes).

• Serve with steamed rice, papadam and chutneys
