Cooling Chamomile Tea Recipe from Hôtel Plaza Athénée,New York City

It’s all about service…with a twist…at the Hôtel Plaza Athénée, New York chicly Moroccan styled Bar Seine. A dedicated bartender of 14 years with the Plaza Athénée, Dutta, serves up a soothing and super cooling Chamomile concoction, just in time as the heat wave rolls into New York this summer.

 A recipe from his homeland, Dutta showcases this special remedy to his loyal bar patrons – one of which we learned requested a beverage to calm her upset stomach. Organic Chamomile tea steeped with fresh mint, cloves and cardamom, fresh squeezed lemon and lime juice, and served over ice – one might consider this refreshing cleanser to be the “aperiTEAf, before the aperitif!”



Cooling Chamomile Recipe

Serves four people


Organic Chamomile Tea – 2 bags

Organic Mint Tea – 1 bag

Fresh Mint – 1 bunch

4 cloves

2 pieces cardamom

2 lemons, freshly squeezed

1 lime, freshly squeezed


Steep tea in 1 quart of boiling hot water.

Add remaining ingredients, but remove tea bags after 3 minutes.

Serve over ice once entire mixture has cooled.

Garnish each glass with a sprig of mint.
