Simple Tomato Soup

Fall is a wonderful time for tomatoes.

This soup is crazy easy! It makes it even easier if you have a pressure cooker. If not, then you can just boil it in a regular pot too. My kids just love this soup with a dollop of cream in it. My favorite topping for this soup is a handful of shredded cheese and tons of hot sauce. It just melts into this yummy gooeyness. Throw in a few pieces of croutons or toasted bread in to add crunch.


Simple Tomato Soup

Serves 6


7-8 small plum tomatoes

1 ½ ” ginger, peeled and sliced

1 small onion, chopped

1 tbs black pepper

1 tsp sugar 

1 tbs butter

Few tablespoons of cream (optional)

Salt to taste

• In a pressure cooker, add the tomatoes, ginger, onions, pepper and salt.

• Cover with water.

• Cook until tomatoes are soft (about 15 minutes in pressure cooker and more in an cooking pot)

Remove from heat and blend till smooth using a hand blender or a food processer.

• Strain the soup using a strainer or food mill.

• Add 1 tsp sugar and butter. You will have to adjust seasonings to taste – you might need more sugar.

• Serve hot with a dollop of cream if desired.

    • LOL! Good luck! Let me Know how it turns out! Adjust to taste with sugar and if tomatoes are not yummy enough throw in a little tomato paste. BTW it tastes great with shredded cheese on top – with that you can def sell to even yr dueling duo
