Urmila Aunty’s Coconut Rice

One of my favorite parts of South Indian cuisine is all the rice dishes that are made with everything from tamarind, tomato to coconut.

I just love them all.

In Urmila aunty’s kitchen, they make a superb coconut rice which is really simple.

Here is the recipe.







COCONUT RICE

Serves 4

INGREDIENTS:

2 tbsp. oil

4 tbsp. grated coconut

2 tbsp. soaked toor daal

1 sprig curry leaves

2 cups cooked white or brown rice

Salt to taste


METHOD:

  • Heat 3 tbsp. of oil.
  • Add 4 tbsp. of grated fresh coconut.
  • Stir for 2-3 minutes.
  • Add 2 tbsp. of toor daal.
  • Add 4 tbsp. of roasted cashew nut.
  • Add 1 sprig of curry leaves.
  • Stir for a minute till the dal pops and browns slightly.


  • Add 2 cups of cooked rice.
  • Add salt.

  • Mix well.
  • Take of fire and serve hot.
