Orange Cake

This cake is a fabulous find! It bakes up really  moist with a very delicate orange flavor. I got the recipe from The Moosewood Cookbook by Molly Katzen. I just love her great earthy recipes. I topped this cake off with some sprinkled confectioners sugar and  chocolate chips.Orange Cake

Orange Cake

1& 1/2 cups (3 sticks) of butter softened

1& 3/4 cups sugar

4 eggs

1 tsp. grated orange rind

1 tsp. vanilla extract

3 cups flour

1 tbs. baking soda

Whisk together

1/2 tsp. salt

1 cup sour cream or yogurt

1/2 cup orange juice

Orange Glaze

1/2 cup orange juice

1-2 tbs. sugar

1 tbs. lemon juice


  • Preheat oven to 350 degrees.
  • Butter a 10 inch bundt pan or 2 8 inch round cake pans.
  • In a large bowl, beat together the butter and sugar until light and fluffy.

Orange Cake

  • Add the eggs, one at a time, beating well after each.
  • Stir in the orange rind and vanilla. Set aside.
  • Sift together the dry ingredients in a separate bowl.

Orange Cake

  • Add this to the butter mixture alternately with the combined sour cream/yogurt and orange juice beginning and ending with the dry ingredients.
  • Mix by hand after each addition – just enough to combine well.

Orange Cake

  • Pour into prepared pan/pans.
  • Bake 50-60 minutes ( less if you are baking in shallower round pans).
  • Bake till a knife inserted all the way down comes out clean.
  • Cool for 10-15 minutes in pan and then invert.


Orange Glaze

1/2 cup orange juice

1-2 tbs. sugar

1 tbs. lemon juice

  • Combine the glaze ingredients in a  small saucepan and bring to a boil.
  • Lower heat and simmer uncovered for about 3 minutes.
  • Pour hot glaze onto the cooled cake.
  • I found that the orange glaze didn’t really work – it didn’t thicken up as I expected it to – so I used it sparingly. You can even skip it.
  • Let the cake stand for at least 10 minutes before slicing.
  • Cool completely and then dust with confectioners sugar and sprinkle chocolate chips around.
