Spinach Fried Rice

This is the simplest fried rice dish. It goes really well with anything – Chicken curry, Chicken Teriyaki Burgers etc.. I make this often when I have left over rice. Its also a very quick and healthy idea for the kids school lunch. I always have chopped frozen spinach in my freezer and that makes this rice an anytime food. You can also make this with chopped fresh spinach.

Leftover white or brown rice ( any kind) – heated and softened with a little water if necessary

1 packet chopped frozen spinach

Salt & pepper to taste

  • Heat 1-2 tablespoons of oil in a wok.
  • Add the chopped spinach.
  • Let it cook for a few minutes till it softens.
  • Add the warmed rice.
  • Mix it well and cover and cook for about 5 minutes.
  • Add salt and pepper to taste
  • Serve
