If you ever shop at a Korean Grocery store, you will find they sell fresh meats, such as pork or beef that have been sliced really thinly. Here is a recipe I use with the pork (you can use beef too) that makes for a great quick, weeknight meal.
Thin Sliced Pork Teriyaki
1 package of thinly sliced pork/beef
¼ cup soya sauce
¼ cup sake
¼ cup mirin (sweet sake)
1 tbs. grated ginger
1 tbs. crushed garlic
1 tbs. sugar
1 star anise, coarsely crushed with fingers (optional)
- Combine all of the above ingredients and let the pork marinate for 15-20 minutes.
- Heat 1 tbs. of oil in a large skillet on high heat.
- Add a few slices of pork to the skillet and cook for about a minute.
- Flip the pork slices to cook the other side for additional minute or so until the pork is done.
- Serve immediately with hot white rice.
Tonkatsu, is the dish that is made most often in my husband’s family for any kind of celebration. We eat it at birthdays, graduations and anything that calls for a celebration. My mother in law, Atsuko says that the significance of eating Tonkatsu is a “show of strength” and helps you “win”.
Tonkatsu is basically a Japanese version of fried pork – but it is oh so good! It’s a family favorite across the board and my mother-in-law makes the best darned Tonkatsu ever! I use the same recipe to fry up just about anything. You can substitute the pork for chicken, tofu, shrimp, fish and even vegetables like eggplant, sweet potato or regular potato.
10 boneless pork chops sliced into about 1/2 inch thickness
2 egg lightly beaten mixed with 4 tablespoons of milk
1/4 cup flour
2-3 cups of panko or breadcrumbs of any kind
6 cups of oil to fry
- Put the sliced pork, flour, beaten eggs and milk, and breadcrumbs in separate plates and bowls.
- Take the pork and dust it lightly with flour.
- Dip the pork in the egg mixture
- Then roll it in the panko bread crumbs till it is completely covered.
- Repeat this till all the pork fillets have been covered with crumbs.
- Set aside.
- Heat the oil in a wok till it sizzles when you insert a toothpick in.
- Add 3-4 of the breaded pork fillets into the hot oil.
- Allow it to fry for 2-3 minutes till it reaches a golden brown color.
- Remove the pork from the wok and let it drain on a plate with paper towels.
- Repeat the above steps with all the rest of the pork fillets.
