Here is a really delicious recipe for a wonderful, healthy fish dish which is smothered lightly with a Japanese accented sauce. The fish can be pan-fried or steamed (to make it even healthier).

Maldivian Gulha : A Recipe from Six Senses Laamu, Maldives
Gulha are bite sized, ball shaped hedhika which are usually stuffed with tuna fish, onions and grated coconut.
If you would like to make “Mas Roshi” which is a flattened version of gulha, then use the same recipe except you need to shape them into flat discs about 3” in diameter and pan fry it.

These Maldivian fish cutlets were one of my favorite kinds of hedhika (short eats) on the island. A simple combination of tuna and potatoes fried to a perfect crunch makes for a great anytime snack.
Maldivian Biskeemiyaa : A Recipe from Six Senses Laamu, Maldives
Biskeemiyaa is surprisingly one of the few Maldivian hedhika ( short eats) that does not have tuna in it ( which the Maldivians love). The main ingredients comprise of chopped cabbage and boiled egg.
For me…..with or without the tuna – this makes for a really yummy snack.
Pan fried fish with chickpea flour (Besan ka Macchi)
This is a great recipe for a quick pan fried fish which goes with just about anything. You can eat this fish with salads, pasta, curries and so on. The besan (chick pea flour) adds great texture and nutritional elements to this dish.
