I love these Quesadillas. It is so easy to make and are a really quick and healthy snack or meal. Its great to send for the kids for school lunch too. You can use any of your favorite tortillas – I personally love the whole grain ones from Trader Joes.

Trader Joes Tortillas
Cabbage with Chicken/Tofu Quesadillas
Cabbage with Chicken/Tofu
Tortillas of your choice
Shredded cheese ( I use a mexican cheese blend but you can use any cheese that melts well)

Heat the tortilla with a little oil

Allow the tortilla to get a little crisp with brown spots

Add a little of the cabbage mixture

Add some shredded cheese

Fold the filled tortilla over and cook a little longer till cheese melts

Cut into triangles and serve immediately

I make the quesadillas with everything – will post more recipes – i just tried it with Gobi and it was delish!
